A Gourmet Cake with Fresh Fruit Even You Can Make
This is not your average fruit cake! I love this cake. It is simple to make but is always a winner. The combination of seasonal fruits and cream cheese icing with a drizzle of chocolate is hard to beat. This is a great cake for Birthdays, showers or a 4th of July celebration. Try a cupcake version for a different twist.
You can make the cake and icing from scratch but this is the fast simple version.
Recipe
1- Box White Moist Cake Mix
2- Tablespoons vegetable oil
1 1/3 cup water
3-egg whites
1-16oz- or 2- 80z whipped cream cheese icing
2- tablespoons orange juice
2 tablespoons orange marmalade
4 oz. or small carton blueberries
4oz. or small carton raspberries
1-pint strawberries
1/8 cups sliced almonds
1-2 oz. chocolate almond bark
Follow the directions on the box to make the cake portion. I used 2- 6″ round pans to give it height but you can also do with 2- 9″ round pans if you prefer.
After you have made the cake portion take one of the layers and place flat side down on the serving tray. Evenly slice off the top of this layer to make it flat.
Then take your cream cheese icing and add 2 tbs orange juice and mix well. Ice the bottom layer. Take about 1/8 cup of the icing and add 2 tbs orange marmalade. Spread the orange marmalade icing on the top of the bottom layer.This is the only place that gets the orange marmalade icing.
Time for some fruit. Add cut strawberries, cut raspberries and whole blueberries to the top of the bottom layer.
Next add the top layer flat side down. Ice with the cream cheese icing all around and on top.
Add cut strawberries, cut raspberries and whole bluberries, and almond slices to the top of the cake.
Melt one cube of chocolate almond bark for about 30 seconds, stir then cook for an additional 10 seconds. Drizzle with spoon in a random linear fashion.
You are done.
Cover and refrigerated until time to eat. This helps to keep the berries fresh.
